Steeping instructions
Portion: Use 8–8.5 g of tea per serving. Halve the bar if you prefer a lighter flavor. Water Temperature: Use boiling water at 100 °C (212 °F) for all steps. Rinse (Optional): Give the leaves a quick 10-second rinse to awaken them. Steeping (Gong Fu style): Tea-to-water ratio: 8 g : 150 ml. For the first three infusions, steep for 30 seconds. Then use flash steeps, gradually increasing the time as the flavor lightens. Simmering Method (Thermos): Tea-to-water ratio: 1 g : 120 ml. Add tea and boiling water to a tea thermos, close the lid, and let it steep for about 20 minutes before drinking. Boiling Method (Stovetop): Tea-to-water ratio: 1 g : 120 ml. Bring water to a boil, then add the tea. Reduce to a gentle simmer and cook for 10 minutes before serving.
Description
Made from mature late-spring leaves of Yunnan large-leaf tea trees, harvested in the Mangshi Zhongshan tea area and fermented anaerobically for nine months. This bar-shaped style retains the tangy aroma typical of De’ang sour tea, with a honeyed fragrance noticeable in the cup. The liquor is smooth and refreshing, with pronounced acidity and a lasting sweet aftertaste. The fermentation process follows the De’ang traditional technique recognized as a national intangible cultural heritage.
