Description
In Chengdun Village, nestled near Wuyishan National Park, certain high mountain areas yield a winter harvest of rock tea, in addition to the traditional spring harvest. This winter rock tea is meticulously harvested during the autumn months, typically commencing in mid-October and concluding by late October. Following an intricate production process, these teas are made available during the winter months. During the tea-making process, a distinct step for oolong teas involves shaking the leaves. This imparts a natural floral quality akin to orchid flowers, a prized attribute found only in well-processed teas. To further enhance its profile, this tea undergoes a charcoal baking process at a slightly lower temperature than the traditional method, resulting in a lower baking level than the other two winter rock teas from our February 2024 tea club. Shui Xian (水仙), literally translated as "water sprite" or "narcissus," represents a unique cultivar. These Shui Xian tea trees, characterized by large leaves, mature later than other cultivars in Wuyishan. Alongside Rou Gui and Da Hong Pao, Shui Xian holds its place as one of the top three most sought-after rock teas. Highly prized for its rich and smooth texture, Shui Xian rock tea is often praised with the saying: "No tea can surpass the mellowness of Shui Xian and the fragrance of Rou Gui."
