Description
Huoshan County lies in the heart of the Dabie Mountains in the western part of Anhui Province. It's the cradle of Chinese yellow tea, giving birth to fresh and invigorating Huang Ya tea, mild and mellow Huang Xiao Cha, and the deeply fragrant and rich Huang Da Cha. Huoshan County’s history of tea production dates back to the Qin and Han dynasties, flourishing during the Tang Dynasty. Huoshan Huang Cha stands as the epitome of traditional Chinese yellow tea, once dominating national production. In 2019, it was recognized as the "Hometown of Chinese Yellow Tea" by the China Tea Circulation Association. Huoshan yellow tea comes in three distinct varieties: Huang Ya Cha, Huang Xiao Cha, and Huang Da Cha. Huoshan Huang Da Cha is a multi-leaf variety of yellow tea that has roots that trace back at least four centuries. This tea is crafted using the native Jin Ji Zhong ("Golden Rooster" variety) tea trees from the town of Dahuaping. Harvested in late April, following the Guyu ("Grain Rain") solar term, the plucking standard is approximately one bud and three leaves with some stems. The traditional processing method of Huoshan Huang Da Cha includes withering, fixation, rolling, and three rounds of "Men Huang" intertwined with three rounds of drying. Its appearance is characterized by large, robust leaves connected by sturdy stems, resembling fishhooks. The leaves display a lustrous yellow-brown hue. The tea liquor radiates a deep, brilliant yellow, exuding a pure and delightful aroma with hints of toasted grains. Its flavor is rich, smooth, and velvety, with a yellowish-brown leaf bottom.
