Steeping instructions
Portion: Each packet contains 7 grams of tea, intended for a single serving. Water Temperature: Use boiling water at 100°C (212°F) for all infusions. Vessel: A gaiwan is commonly used in Chaozhou for brewing Dancong tea and is recommended, as it allows for faster pouring and enhances the experience of smelling the tea's aroma. Steeping: - If using the entire 7g portion in a 110-150ml gaiwan, start with flash steeping (quick pour and strain) for the first three infusions, gradually increasing the steeping time with each round. - Alternatively, use a tea-to-water ratio of 1g per 22ml. Start with a 5-second steep, then increase the steeping time by 5 seconds or more with each subsequent infusion.

Bei Tou Xiang (陂头香) Dancong is a rare and complex Phoenix Dancong, classified under the Ye Lai Xiang (夜来香, Telosma cordata) Fragrance Type, known for its refined floral depth and enduring sweetness. This tea is traditionally crafted using pure charcoal roasting, a method that enhances its layered complexity while preserving its signature floral notes. Grown at 680 meters in the mid-to-high mountain region of Fenghuang Town, this Spring 2024 harvest embodies the best of high-mountain Dancong terroir. The first infusion reveals a delicate yet distinctive floral fragrance, which lingers gently in the aroma. The tea liquor is smooth, rich, and layered, transitioning from an initial sweetness to a deep, lasting aftertaste. With each sip, the tea’s natural honeyed undertones and refreshing mouthfeel unfold, leaving a lingering huigan (回甘) that persists long after drinking. This tea’s strong base and high endurance make it exceptionally resilient to multiple infusions, evolving in flavor with each steep.
