Steeping instructions
100˚C / 212˚F, unnecessary to rinse. Gongfu style: 1g : 20-30ml (Its standard tea evaluation ratio is 5g : 110ml). 5s to start with, and increment 5s or more per infusion. Western style: 1g : 80ml, 1min+1min Bowl style: 1g : 80ml.
Description
Rou Gui (肉桂) rock tea’s aroma notably resembles cassia (or Chinese Cinnamon), thus named cassia in Chinese. This tea is one of the top three most popular rock teas along with Da Hong Pao and Shui Xian. It is highly prized for its outstanding and lingering aroma, and there’s a common saying “No tea can exceed the fragrance of Rou Gui and the mellowness of Shui Xian”. This tea was first developed more than one hundred years ago during the Qing Dynasty. Its cultivar, which has the same name, is a well-established cultivar widely planted in Wuyishan. Its tea trees are bushes with medium size leaves that mature relatively later than other cultivars. This tea is from Da Wang Feng, a landmark scenery area of Wuyishan National Park. During the fine-processing stage, it is baked with charcoal to a little higher than the medium level.
