Fresh Chinese Green Teas
Our April Tea Club features 7 fresh, pre-Qingming green teas from 5 provinces of China: Zhejiang, Guangdong, Guizhou, Sichuan, and Yunnan. Qingming is a solar term that happens in early April, and it's used as an indicator for tea harvest time. Depending on the producing regions' climate, the first flush teas are almost always picked before Qingming, and pre-Qingming teas are known to represent the highest quality compared with other picking times. Each of thse teas is unique in their own way with its special aroma, flavor, and processing technique. High quality Chinese green teas are always picked by hand, which all of our 7 teas are. Based on the picking standards, they can be divided into 3 groups: Gan Lu & Mao Jian (all buds), Long Jing & An Ji Bai Cha & Sichuan Eco Green (one bud and one leaf, with occasional immature second leaf), Yunnan Phoenix Green & Jin Xuan Green (one bud and two leaves) Brewing instructions: In China, green teas are brewed more often in highball glass or glass mugs rather than in gaiwans or teapots. This is both for its taste and visual enjoyment. Also, a cup of tea should be refilled when there's around 1/3 left. We suggest brewing using a highball glass or glass mug at 80-90˚C (176-194˚F), and you can also use a tea pitcher or a porcelain mug. Or, you can try brewing with gongfu style and compare the differences between brewing methods.
