Fuding White and Black Tea

This month, we explore Fuding, Fujian—one of China’s most important homelands of white tea—while debuting Bai Lin Gong Fu, one of Fujian’s three classic Gongfu black teas, to show how one region can taste wildly different across craft, season, and time. Two of the white teas are autumn-harvested and compressed into 5-gram biscuits. One is made from wild-grown tea trees; the other is especially distinctive—an autumn Shou Mei base later pressed together with osmanthus flowers, creating a gentle, honeyed floral lift over Shou Mei’s naturally mellow sweetness. To balance these deeper autumn profiles, we added a spring Bai Mu Dan “White Peony” in dragon ball form, offering a brighter, more floral expression. Finally, we complete the story with a spring-harvest Bai Lin Gong Fu black tea made from local Fuding cultivar material. Crafted with traditional methods and gentle drying, it reflects the classic Bai Lin character: a bright, clear red liquor, a refined downy fragrance, and a sweet, smooth finish that stays clean rather than heavy. Together, these four teas offer a compact journey through Fuding’s craft traditions: minimalist white tea, layered floral compression, and the refined depth of Fujian Gongfu black tea.
